1. It crystallizes over time
This is one of the most telling signs. Most raw honeys begin to crystallize within 1–6 months. If a honey never thickens or grains up, it may be ultra-filtered or adulterated. (More on why crystallizing is a good thing.)
2. The texture is thick & rope-like
Drizzle it: real honey falls in a steady, rope-like stream and briefly piles on itself before leveling out. Fake honey tends to be thin, runny, or watery from added syrups.
3. It has a complex aroma & taste
Pure honey carries the scent of its floral source — floral, fruity, or earthy notes, not just flat sweetness. Darker varieties often give a mild warming tingle at the back of the throat.
4. The label names a floral source
Real honey usually specifies its source — wildflower, clover, buckwheat, Sidr. If the label just says "honey" with no origin, it may be a blend of whatever was cheapest.
